Fluffy Homemade Bread Rolls – Easy Recipe

Ingredients

  • 500 g all-purpose flour
  • 300 ml warm water
  • 7 g instant yeast (or 25 g fresh yeast)
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil (or melted butter)

Instructions

1. Activate the yeast

  • In a bowl, mix warm water + sugar + yeast.
  • Let sit for 5–10 minutes until foamy.

2. Prepare the dough

  • Add flour + salt + oil into the yeast mixture.
  • Mix and knead 8–10 minutes until smooth and elastic.
    The dough should look like in the first picture — soft and stretchy.

3. First rise

  • Cover the bowl with a towel or plastic wrap.
  • Let rise 1–1.5 hours, until doubled in size.

4. Shape the rolls

  • Divide the dough into 4 balls (or 6 smaller).
  • Place on a tray lined with parchment or cloth.
  • Dust lightly with flour (optional).
  • Let rise again 30–40 minutes.

5. Make the rustic cracks

  • Using a sharp knife or blade, gently score the tops with a cross (like in your photos).

6. Bake

  • Preheat oven to 220°C.
  • Place a small dish of water in the oven (for steam → soft inside, crunchy outside).
  • Bake 20–25 minutes, until golden brown.

7. Cool

  • Let the rolls cool on a rack for 10 minutes.
