Beef Stew Soup

Here’s a comforting and hearty Beef Stew Soup recipe that I can’t get enough of! It’s the perfect cozy meal, and I’m excited to share it with you. Don’t be embarrassed—this soup is too delicious to keep to myself. 

Ingredients:

  • Beef stew meat (about 1–1.5 lbs, cut into chunks)
  • Carrots (2-3, sliced)
  • Potatoes (3-4, peeled and diced)
  • Onions (1 large, chopped)
  • Mushrooms (optional, a handful, sliced)
  • Beef broth (4 cups)
  • Garlic (2 cloves, minced)
  • Thyme and bay leaves (for seasoning)
  • Salt and pepper (to taste)
  • Olive oil (for searing)

Instructions:

  1. Brown the beef: In a large pot or Dutch oven, heat some olive oil over medium-high heat. Brown the beef stew meat on all sides, then remove it from the pot and set it aside.
  2. Sauté the vegetables: In the same pot, add the chopped onions, garlic, carrots, and mushrooms. Sauté for a few minutes until the onions are softened.
  3. Add broth and seasonings: Return the beef to the pot and pour in the beef broth. Add thyme, bay leaves, salt, and pepper to taste.
  4. Simmer the soup: Add the diced potatoes, stir everything together, and bring it to a boil. Reduce the heat to low and let it simmer for about 1.5-2 hours, or until the beef is tender and the potatoes are cooked through.
  5. Serve: Once the soup is ready, remove the bay leaves and serve hot with crusty bread on the side.
